Icellars Estate Winery, founded by the Icel family in 2010, stands as a distinguished boutique winery in the picturesque Niagara-on-the-Lake, known as the birthplace of Canada’s wine industry. The winery, which utilizes a 60-acre estate, meticulously selected for its optimal grape-growing conditions, has become renowned for its production of small-batch wines. Adnan and Elif Icel, the proprietors, have carefully nurtured vinifera varieties such as Cabernet Sauvignon, Merlot, Syrah, Cabernet Franc, Malbec, Petite Verdot, Pinot Noir, Chardonnay, and Viognier, taking into account extensive soil testing, weather data analysis, and consultations with experts. This hands-on approach extends to their daily oversight of their 48-acre vineyard, where they tend to each vine personally, supplemented with sourced premium single vineyard grapes in bountiful years.
The commitment of Icellars to sustainability and future-oriented farming is noteworthy. Since August 2020, they have embarked on full organic farming practices across their 60-acre estate, with a goal to become Certified Organic by Ecocert Canada after the requisite 36-month certification process in August 2023. Additionally, they uphold regenerative farming practices to protect the soil for future generations, earning a certification in Sustainable Wine Growing from Ontario’s program. Icellars is currently implementing a significant Greenhouse Gas Reduction project, aiming to be the first Net Energy Zero Winery in Canada by June 2023. This initiative includes solar PV electricity generation, geothermal heating & cooling, and the utilization of precise agricultural technologies.
Icellars offers wines that capture the essence of their unique terroir, influenced by classic winemaking styles deeply entrenched in viticultural history. Their label design mirrors these principles, incorporating the stag design inspired by ancient Hittite wine drinking vessels and the Hittite sun disk symbolizing prosperity, fertility, and celebration. Owner/winemaker Adnan Icel, together with a skilled team, ensures the creation of these distinct wines. The winery building is designed on the principles of functional simplicity, housing all operations under one roof. This ethos extends to their environmentally friendly processing of small lot wines by gravity flow, and a cozy tasting room offering their own limited production wines.
